One of my favorite guilty pleasures is going to Olive Garden for their all-you-can-eat Soup, Salad and Breadsticks (a pretty good deal at $5.95). All of their soups are really good, but my favorite is their Zuppa Tuscana.

I did find online the recipe for their soup (from’s Olive Garden copy-cat recipes). Using this recipe, here’s my low-carb version of it…

Follow the directions of this receipe, but make the following changes:

1. Make sure the Spicy Italian sausage you are using is relatively low-carb (less than 2 g per link)

2. Use only 1/2 of a medium sized potato instead of 2 potatoes.

3. I think I would double-the amount of chicken stock to boost the flavor.

By my unscientific count, the recipe as I modified it would have about 8.5 net grams of carbs per serving. I plan to make this soup soon , so I’ll let y’all know how it goes.
